Joe and I both love scallops. Unfortuntely, they don't freeze well, so I need to make them the day of or after shopping for them. Usually I just saute them in some olive oil/butter until they are nicely browned, which only takes a few minutes. Add in some couscous (takes 5 minutes) and some steamed veggies and it's a super-fast meal!
